What are some other music production techniques that haven't stood the test of time?
Just about anything with '80s electronic drums. The only thing I can think of that features electronic drums from that era that still sounds pretty fresh is King Crimson's Discipline.

Some of the electronic stuff that Phil Collins did in the early 80's with his drum sound (particularly on "Face Value," "Abacab," and Peter Gabriel's 3rd album) still sounds pretty inventive, though I also know people who think it sounds pretty dated, too.
Just because T-Pain has won some Grammys and popular acclaim doesn't mean that his music's production style won't sound really dated in 10 years.
Personally, the Auto-Tune will evolve even more than it is. Auto-Tune is not only used to distort vocals, it is used to clean up pitch in vocals.
Just like how above me is stating electronic drums are dated. They just have evolved so you can use them in alot more ways now. Same will be with auto-tune.
It all depends on the listener. If you like an old song it's classic to you. If you don't like it then it's dated to you. It's as simple as that. Besides, if I like a song who cares what others think of it?
The Night Chicago Died and Undercover Angel sound very dated.
