Favourite movie villain: A tie between Richard Gere as Dennis Peck in Internal Affair (1990) and Harvey Keitel as The Lieutenant in Bad Lieutenant (1992).
Quote:
The Nun: [about her attackers] I have forgiven them. The Lieutenant: But do you have the right? You're not the only woman in the world. You're not even the only nun. Your forgiveness will leave blood in its wake. What if these guys do something like this again? To other women, other virgins? Old women who die from the shock? Do you have the right to forgive them? Can you bear the burden, sister?
Bad Lieutenant

Peck and Avila are discussing Avila's wife, Kathleen] Dennis Peck (Richard Gere): She's very pretty too. A little skinny for my taste, but they say the skinny ones give good head so...
[Raymond knocks him to the ground] Dennis Peck: OK, here's what's going to happen. I'm gonna f*ck her for a while and teach her how to come. Raymond Avila (Andy Garcia): Get up! Dennis Peck: Then that way, she can show you what she likes!
[Raymond decks Dennis again] Dennis Peck: They said you're a pretty good boxer, Raymond. You're pretty f*cking good.
[coughing blood] Dennis Peck: Not bad! Raymond Avila: [throws a handkerchief at Peck] Clean yourself up! Dennis Peck: Give my best to Kathleen!
Dennis Peck: [after decking Raymond in an elevator] Hi, Raymond!
[referring to Raymond's wife] Dennis Peck: You know what she really wanted? You know? Yeah, I should have guessed. She liked it in the ass, Raymond. That's right. Right in the f*cking ass! Drove her crazy. She came so much, for a second I thought she was going to pass out on me.
[decks Raymond again] Dennis Peck: You know what they say about Latin fighters, Raymond? You know what they say? Too f*cking MACHO! That's right. TOO F*CKING MACHO! They don't backpedal when they have to. So they're used up. Young.
[dangles a pair of panties in front of Raymond, then gives them to him] Dennis Peck: Yeah, why don't you clean yourself up with that. That's right. Clean yourself up.

Max Cady (Robert Di Niro) in Cape Fear
King Edward I (Patrick McGoohan) in Braveheart
Tommy DeVito (Joe Pesci) in Goodfellas
I liked all your choices, but this one is a stand-out.
Cruise was superb in that most excellent film.
LOL Donth8Me, I too find Zane quite handsome--but I really did think he was a good villain in Titanic.
Heath Ledger was *fantastic* as the Joker. ::sigh::
Some that come to mind that haven't been mentioned yet:
Henry Fonda in Once Upon A Time In The West.
Vincent Price in House of Wax.
Christopher Lee in The Wicker Man.
Gene Hackman in Unforgiven.
David Carradine in Kill Bill.
