the French language signage would be easily dealt with but as to the architecture; that's not so cleaqr cut as you are making it as Montreal's architecture reflects examples from many periods and many origins, not just French.

Yeah, Montreal is really a mix of architectural styles. That's why it's so popular for filming: it can stand in for Paris, London, New York, in addition to a whole bunch of other places...

There was a TV movie called "A Diva's Christmas Carol" (2000) filmed in Montreal. It stars Vanessa Williams as "Ebony Scrooge". The first scene was of her filming a music video supposedly in Paris. The extras sounded like they may have Quebeckers with imitation French accents. Don't watch the movie unless you must!

No one here stated that US movies made in Canada are Canadian culture. We do it for the money, no other reason.
