Simliar to what i do. My friends and I do that ride every year. Instead of leaving from SOHO we leave from West Hempsted. Ride all the way to Montauk Point, takes about 11 hours. Sleep at a cheap motel then take the train back the next day.

Yeah, there is a bike/pedestrian path alongside Nassau Expressway leading to the bridge and a protected sidewalk on the bridge itself, though there are signs telling you to walk your bike across.
