If I'm visiting for two nights, I need recommendations for two restaurants. I'm not looking for the most expensive nor the cheapest, just good quality.

Check out Lotus of Siam on Sahara about 2 miles east of the strip. One of the best Thai places in the US and the prices are very reasonable.

that question is so broad, given the amount of restaurants here!

where are you staying when you're here?
does distance from where you will be staying matter?
are you looking for any type of food? anything to specifically avoid?

Lotus of Siam is a great resturant, definitley a can't miss resturant.

If only two nights ... ask a few people at the hotel ...
Food is quite abundant and reasonable for a desert ...

The correct survey questions are:

If you were leaving Las Vegas forever, what are the two restaurants you'd miss the most?

Or what are the two meals you'd miss the most...and where would you find them?

But we need to know if you'll have a car, or need to stay close to your hotel, and at which hotel you are staying. Also need to know if you have any food preferences, or foods you need to avoid. Some areas of the country are not used to spicy food, and the residents wouldn't know pad thai from chili colorado. So let us know some foods you like and we'll steer you there.

If you can't find something to really good to eat along the strip ... ???

We'll be staying at the Signature, no car. On our first visit about six weeks ago, we ate at Lawry's (ok) and Emeril's (my mothers fave). Our last visit a couple of weeks ago, we ate at NobHill (my wife's favorite) and Olives (good but loud). We have no problems with ethnic, or getting a taxi if its a good restaurant. I was wondering what the locals liked which quite often is better and cheaper than those restaurants geared toward tourists. I plan on returning again and again (to help the economy), so more than two restaurant suggestions would be welcomed.

One on the strip...Mon Ami Gabe....get a res but then wait for the patio. Foods good, ratioally priced and neatest toursit watching place on the Strip.

One way off strip. Take a cab to Garfields in Desert Shores. Eat on the patio. Food is good and moderately priced. Setting is different.

Backup near strip. Bootleggers...south strip. Good Italian.

there's tons of good food, regardless of whether on strip or not.

sushi:
there's lots of great places. and you'll hear tons of recommendations. the only sushi i didn't like in town was at sushi samba (which is at the palazzo) - i thought the quality was average at best, and it was overpriced.

on strip: for me, i prefer yellowtail (which is at bellagio). but i'm a single guy, so that may play a part in my rec there.
i think some of the older (than me) folks rec okada (at the wynn). i've yet to be there, but i've yet to hear anything bad about it either.

off strip: my favorite sushi place is sushi loca, which is in the centennial hills area. excellent quality.

a really good off strip place i just found a few weeks ago was ichiza, which is on spring mountain, near arville.

mexican:

on strip: not sure of the choices on strip. nothing really stands out.

off strip : lindo michoacan (there's a number of locations in town, closest to the strip is a few blocks east desert inn) is ok. it is not a "must" visit place.

roberto's taco shop is a good spot if you're driving around town running errands and you're in the mood for mexican... again, not a must visit place. maybe others can chime in.

agave, located in summerlin on charleston boulevard, is sort of a new age mexican. i thought it was good.

i am from southern california though, so i think my standards for mexican food may be a little higher. but there'sa lot of us so cal transplants here too... but i digress.

steak:
probably the area that will generate the most controversy (provided people continue to check in and respond to this thread).

on strip:
capital grille is good (at fashion show mall, across from the wynn)

slightly off strip:
voodoo steakhouse (rio hotel)
stirling club (turnberry place/towers) - must be a member/know a member though. the chef there is charlie palmer. so, i'd suggest charlie palmer (mandalay bay)

off strip:
t-bones (at red rock casino) very good. filet mignon was good. buffalo filet mignon was awesome.

on strip restaraunts worth checking out, don't necessarily fit a good description:
david burke (venetian), described as modern american.
table 10 (at palazzo). your mom would probably like it, as it is an emeril lagasse restaurant. described as new american.

off strip restaraunts worth checking out:
you're likely to get a bunch of recommendations here as well.

vintner's grill in summerlin. great atmosphere, great food.

i would NOT recommend off strip fleming's and roy's locations. i have found them to be average at best. and with the amount and variety of other restaraunts available, there's no reason to go there (in my humble opinion).

as i said before, there are tons of places here, and you're likely to get a lot of good recommendations. and they're likely all to be right!
