I'm trying to build a list of good restaurants either with reasonable prices or with great value on the strip or within walking distance.

Favorite so far...

Beijing Noodle No. 9 - Caesars Palace

Mon Ami Gabi - Paris

Wynn Buffet - Wynn

Noodle Asia - Venetian

there is an italian restaurant in the stratosphere.. Fellinis- excellent
favorite buffet - planet hollywood spice market
favorite bar/hangout -penazzi's oyster bar at harrahs

In the Miracle Mile Shops inside Planet Hollywood (Old Aladdin) are some good ones. We like Lombardi's Romagna Mia.

Then there are some in Caesar's Palace Forum Shops like the Cheesecake Factory. If you've never eaten at a Cheesecake Factory you're missing a treat. Good meals, good prices, large servings (always enough for another meal), and the world's best cheesecake...especially the Godiva chocolate cheesecake.

The Rio probably has the best seafood buffet. It's kind of a long walk but it can be done.

New York² is a pretty good place to eat. Also the MGM, and Mandalay Bay.

But I hope you realize the Strip is four miles long and there are a few hundred restaurants. Where are you staying and for how long?

its owned by Cheesecake Factory and is basically the same food, i ate there and it was good, i don't remember the price though...

On the Strip, I like the buffet at the Luxor. "Near" the Strip, my two favorite restaurants are Artem on Decatur & Flamingo (Russian), and Togoshi Ramen on East Twain & Swenson. You don't need to spend a lot of money to have a great meal.
