There are a number of agecnies who rent sports cars and specialty vehicles. Here si one that MIGHT have what you want.

Las vegas car rental, Las vegas exotic car rental - Dream Car Rentals, Las Vegas, NV

I truly doubt they'll have an XKE to rent. Classic cars like that are finicky beasts. These "exotic rental" shops specialize in newer supercars. That way they don't have to muck around with oil leaks and timing problems. There are also liability issues because these old cars don't have air bags, modern seatbelts, or anything else that might protect the driver. Finally, if you owned an XKE, 356 Speedster or a '63 split-window 'Vette, would YOU let anyone else drive the car? It's not like you can take the insurance money and easily obtain another car if the renter totals it. Better to offer a replica AC Cobra. It's no big thing to get another if the renter wrecks it.

You'd have a better chance trying to find an XKE for sale in Las Vegas and taking it for a test drive.
