Has anyone done an under mounted kitchen sink? It looks really nice and makes clean up a lot easier but am worried about if and when we go into replace the sink. Is it harder to put in a new sink if the old one is under mounted? What're the pros and cons of this?

PS: We're getting granite counter tops, if that matters.
I don't have one but my sister does - and it is cool. Makes cleanup a lot easier and it looks nice and clean counter-top wise.. Building a house I would get one for the kitchen for sure.
Here's something to consider. If you're getting granite countertops, an undermount sink will add cost to the countertop. The hole for the sink has to be polished and shaped.
If you were using a top mount sink, the hole will be left unpolished. There's less labor time you need to pay for.
As for harder, yes, it's a little bit harder to install an undermount sink. However, it's not that much harder. A top mount sink is just dropped in from the top. An undermount sink usually requires attachment clips and drill holes partially into the granite.
If you need to replace the sink at a future date, you will also need to find one that's reasonably the same size if you have an undermount sink. The hole needs to be matched to the new sink. There's more leeway with a top mount sink. All it needs to do it cover the hole that was previously cut.
I have granite counter tops and have an undermount sink. I did much research on sinks. And in the end chose a granite powder sink. But just not any one. As alot of them will hold coffee grinds, and will stain from diff types of water etc. and I had to find one that's indestructible. I chose Blanco for my sink , and Rohl for my faucets and spigots,
It's deeper and does not allow splashing out water onto my granite,
If you look up Blanco, it would be Blanco-America.
We have under mount throughout our house - kitchen sink and bathrooms. I recommend them. They are easy to clean. They are mounted with clips and sealed.

I just finished 2 bathroom remodels in my house with under mounts. The cost issue never came up. I was given the price before he knew it was an under mount installation.
I have had undermount sinks installed on granite and it is the only solution I will use from now on.
The granite is scored with grooves that allow mounting hardware. That is used in conjunction with silicone cement to bond the sink to the underside of the top. It can be removed if need be.
IMO it is the best method of sink mounting.
