I could argue that San Francisco has most of those attributes, all in one city (it's diverse, has history, is laid back and can have a smaller town vibe to it, tons of Victorian homes, amazing food, ON the ocean, perfect weather and mountains galore).
an urban environment and culture like NYC is not to be found in SF.
mountains like Denver are several hours away from SF in the Sierras, LA actually has better and far higher mountains.
the small town laid back community vibe of Portland is certainly not how I'd describe SF.
SF has a good balance, and might be the most well rounded city when it comes to nature/weather/dense city in the U.S. but if you want the *best* of these categories, it is not.
New York:
Skyscrapers, Bridges, Transit, Italian food, MLB and NHL team
San Francisco:
Demographics, Location, Politics, Chinese food, NFL team
Los Angeles:
Weather, Beaches, Highways, Mexican and Korean food, NBA team
Seattle:
Cannabis, Mountains, Traffic, Japanese food, MLS team
From your description, A mix of LA + NYC sounds great, maybe also a little bit of San Francisco and Seattle too, such as the Chinese and Japanese food, and the NFL and MLS team.
Toronto: The perfect size. Large city feel.
Seattle: The scenery (water and mountains)
Denver: The sports and people
San Diego: The weather
