Eggs benedict w/a piece of filet mignon,slice of tomato and spinach hollandaise............and only for dinner! (and only a couple times a year....just sinfully delicious)
I love eggs anyway I can get them. I do though have a penchant for hard boiled eggs sometimes I will hard boil a dozen and eat them at all times of the day for a snack. Sometimes scarfing down 4 or 5 in a day.
I have to have my eggs well done, with the yolk mixed thoroughly with the whites (so, either scrambled, or omelette, or quiche). If they're runny, they go back. If the whites and yolks are too seperated, they go back. I won't even let my husband bring egg salad into the house. I like my own omelettes best: paper-thin sliced shallots and sliced mushrooms sauteed in butter, pour the eggs over, cook til the first bubble pops, flip it to cook the other side, toss a slice of swiss on top, fold it over, and slide it onto a plate.
We used to have a new invention that was part toaster and part egg poacher. You put an egg in the steamer, pushed down the english muffin in the toaster and they both came out perfect at the same time. I think one of the rug rats stole it. They are cheap at Walmart and they work great.
