On Friday, we were hosting family, and my wife and I joined forces to make her famous meatballs and marinara (the best) and my homemade past (Cut to Fettuccini) for dinner. It was great, but it's what I did with the leftovers that I want to post about.
Next day, Wife had a long day at work, so I wanted to cook for her. The only instructions was "something to use up leftover meatballs". We had some good Italian Rolls in the freezer, but had fresh Italian Bread from the night before on the counter. I wanted to use it, but knew a "meatball sub" could not be made well from sliced bread. How can I use the Italian Bread?
I decided on Meatball, Fettuccini and Marinara Grilled Cheese. OMG, tha' bomb:
Started with hand-sliced bread, and plenty of real butter.
Used my griddle, and built with
Shredded mozz on both sides
Sliced the balls and heated with sauce and pasta
Added the sliced balls, another later of mozz, then the pasta.
Let it get golden, eventually assembled sammiches, and served.
I had more pics on my phone, but these were the only ones I transferred to the computer. YUM!
Oh, and note the extra marinara for dipping (and the salad to make me feel good about all that butter!).
Today I have a mild upset stomach -- just finished up some antibiotics and they always wreck my stomach. So I will just have some canned chicken noodle soup (my pandemic pantry hoarding) and a grilled cheese. I do have a fresh mango and that will be dessert with a cup of peppermint tea.
Tonight we are having air fryer chicken wings with 2 or 3 dipping sauces, pimento cheese spread and diced bacon on celery sticks, salad-shrimp-topped deviled eggs, sliced tomatoes, and ice cream sandwiches (made with oatmeal cookies and coconut ice cream). The next few days will be pretty hot for Washington but nothing like a lot of you have to deal with!
Sounds good. I'm actually having air fry wings this week as well. I bought my family pack of wings last week, so I will air frying them this week.
Tonight we are having some iron skilled pan fried okra without the normal meal/flour coating. It's a old, old family throwback method of prep. For the entree it is link hardwood smoked turkey sausage and a tomato on the side.
I love good Mexican food, especially quesadillas and I never attempted to them until tonight, so I made Pulled Pork Quesadillas with an heirloom tomato on the side it was really good❗️
