Chicken * and wild rice casserole with cranberries, chopped spinach and porcini mushrooms topped with herb stuffing crumbs and dotted with butter.

Cabbage and carrot slaw with honey Dijon dressing.

Fresh pineapple chunks for dessert.






* this was my mom's recipe. I updated it a bit and used plant based "chicken" - the original recipe used real chicken. Either way, it's tasty.

Hubby picked up one of those rotisierre chickens from our local grocery store. 1 breast, 1 drumstick.
Cole slaw, MacNCheese, and mashed potatoes.
Pure Leaf Subtlely Sweet ice tea
