Busy day today so I made a zucchini quiche with some leftover zoodles. Gall bladder giving me slight problems so a small dish of beets on the side. That'll take care of it
Pan fried cod over a bed of mini bowtie pasta and a lemon brown butter sauce with garlic and capers, steamed carrots on the side, hot lemon tea to drink.

What are zoodles?
Caesar salad with pork loin slices. I make my own dressing.
Next is tacos. I have to make my own tortillas, my own enchilada sauce, even the chili powder. And grind the cooked hamburger in the blender. Works like a charm.
They're simply spiralized zucchini. Come out looking like long spaghetti but much healthier (for me anyway) than pasta.
Your meal ideas sound good too. I love Caesar salad and tacos.
