What I call Mexican lasagna. Layer a cake pan with corn tortillas, refried beans, seasoned ground meat, onions, tomatoes, salsa and cheese. Bake, cut into squares and serve with sour cream.
When it stops raining I'll pick some rhubarb and make a bread pudding with streusel. Had some at a little cafe a few weeks ago and it was wonderful.
The men have been building a backyard run for the cats and if that meal doesn't fill them up nothing will!

I am in the process of making a quick flatbread from
1 cup of cottage cheese and 2 whole eggs and today fresh dill as the spice,all mixed in the food processor and baked at 350°F in a 9 x 13 baking sheet with parchment paper for about 35 to 40 minutes.
Served with a Mediterranean style garden salad.To drink a Löwenbräu.
Later in the evening a stroll to the frog/toad pond then back for a few rounds of Schafkopf.

Brought home some meat and crawfish pies from Bayou Market right here where I live. They're on my table now. Two Natchitoches meat pies, and also, two crawfish pies. Can't get enough Louisiana culture right here in Texas.
Barbecued wild-caught salmon in a smokey marinade. Corn pudding. Spinach and tomato salad. A chilled Stella to drink.
Arkansas Bread pudding for dessert. With blueberries.
