What’s for Dinner

I'll finish off the soup tonight, and more crusty bread, of course.

One last night of spaghetti and meatballs. It's been too cold out to do much with a lighter menu yet and some carbs are always a good fix for gloomy skies.

I'm serving it with a fruit salad with lemon honey ginger dressing. Grapes, honeydew melon and tangelos. And garlic toast.

I’m making chicken salad with celery, toasted walnuts, diced apple, fresh dill and chives, mayonnaise and a squeeze of lemon.

Will offer a sandwich bar with lettuce, baby spinach, paper thin onion, baby cucumber slices, pickles, Swiss cheese.

We enjoyed our Cobb salad so much last evening that we're making another one today and adding roasted shrimp to make it a main course. Happy Friday!

One last leftover meal. Char siu in buns pickled veggies and all that.

Tomorrow will be some type of pasta with dandelion greens and meyer lemons... but haven't totally worked it out yet.

Mother Nature is testing me and the garden, one week of winter storm weather, the next week in 85 degree range.

Leftover 2 slices of pizza and we split a TB burrito (toasted).

Beef short ribs in the Instant pot with gravy made from the drippings, mashed potatoes, steamed broccoli and a garden salad.

Heading to the local golf club house, & see whats on offer, we will probably get one dinner to go, & bring it home. I have already prepped some beet greens, onion, garlic & radish greens to have with whatever we get. I love it when I buy veg with a load of greens attached.
