Last night at the Case abode, I made some of the most robust Hamburger Helper (beef pasta) I've ever had, and it was alongside some sweet green peas.

Tonight at home again, I'll be putting together some pre-prepped cheese enchiladas in a red sauce, refrieds, and Mexican rice.

Went to Whole Foods today and they had some wild caught blue catfish - I had never seen that before. So fried catfish, Alexia sweet potato waffle fries and a Waldorf type salad

I happened to see a crazy recipe on Facebook and decided to try it.

Sheet Pan Enchiladas

I used the ingredients mentioned in the video but added some beans that I lightly mashed and the end result was totally awesome, I couldn’t stop eating it!
