Trying a new recipe from the New York Times. Braised chicken thighs stewed in coconut milk and diced tomatoes - seasoned with cumin, cinnamon, garlic, ginger, and red pepper flakes. Serving it with rice, of course - calrose.
I was hungry for a Reuben sandwich and potato salad. DH and son have been out of town cleaning out his deceased brother's apartment so I went out and bought the ingredients. Don't know who makes a good one anymore.
Now I've got ingredients and didn't want to go to the effort of making anymore so I started googling. Such fun. There's a lot you can do with those ingredients - biscuits, muffins, Reuben balls, dip, casseroles. I imagine you could even make scones or a quiche.
I decided on a strata. It's soaking up the eggs right now and will be ready to bake tomorrow.
I'll be making a flan with a bar of cream cheese my neighbor had left over from Christmas for dessert. You don't need cream cheese but since I don't have a flan pan I'm thinking it will bake up better with the added ingredient.
The place I stayed in last year in Mexico had a restaurant next door with Queso Pay. OK, what the heck? It was flan with the added cream cheese.
The rest of the story is because the owner refused to "pie" his protection money the cartel burned him down in the middle of the night and we were routed into the street in various stages of dress or undress. A new experience. And I learned it can be risky to stay in a building with a palapa roof!
So after finding my new favorite dessert it was no more pay for me the rest of the vacation.
Since I enjoy a good story I'll go on. That was at least the second time that block had had people in disarray in the night. The man who owned the condo across the street had rented out to a man who ordered up two ladies of the night and when the owner got back the renter was near death with alcohol poisoning.
He got so angry he kicked the girls out into the street carrying nothing but his bed sheets and spent the night saving the man's life. That was in the day when there was no one to call. The girls took the ousting as an opportunity to advertise. Guess it wasn't very quiet.
Yesterday over breakfast Mrs B asked if we could have pizza again soon. So I took a pizza dough ball out of the freezer after breakfast to thaw and rise for 24 hours. Tonight we had pizza, a salad and vino from Puglia, a primitivo. No dessert still, but pizza is almost dessert!
Savory, herbaceous cottage cheese waffles topped with soft cooked eggs and hot sauce, creamed spinach, and ragout of wild mushrooms and sundried tomatoes.
Copped carrot orange and arugula salad. A hot cup of tea.
