Elnina, "[i] must spread it around" right now, but you're killing me with those pictures!! I LOVE Mexican food -- there's a really good Mexican restaurant next to my favorite grocery store, but their prices have gone through the roof (even though their web site still lists years-old prices ) so, alas, I don't go there much anymore. I need to put homemade Mexican food on an upcoming menu!

I will likely splurge and go back to my Mexican restaurant this summer, as a special treat. (There's actually a Chipotle in the town next to mine, but I have literally never gone there. They must have SOME good items, no?)
Hubs wants spaghetti tonight, so that’s easy. I think I have Italian sausage, and a nice big chunk of Parmesan from Costco, which someone said was really good.
I had an Annie Chun sesame peanut noodle bowl but I had to add a LOT to make it a really delicious, filling dinner.
Picture #1: the teeny-tiny amount of veggies you get. They don't even cover the very small bottom of the small container they give you. I find this puzzling since Annie Chun is known for vegetarian/vegan food.
Picture #2: I cooked more veggies -- fresh carrots, fresh zucchini, fresh spinach, canned mushrooms (alas, I'm out of fresh). I also cooked about 2 ounces of diced pork tenderloin in another little pan -- that took about 2-3 minutes!
Picture #3: the meal in my lovely bowl (NOT a Fiesta bowl for once -- this is a "pasta bowl" by another manufacturer, can't remember the name but I have quite a few colorful pieces in the line). Anyway, the meal was wonderful and very filling.
Hope everyone has enjoyed the weekend! Here in lovely New Hampshire, we've had snow flurries the whole time but only an inch or two new accumulation. I'm hoping for SPRING!! At least this Wednesday we'll be into MARCH! I think I'll celebrate by drinking lemonade with dinner even though we're expected more snow that day, LOL!
