What’s for Dinner

Tonight is baked eggplant parmesan with penne on the side. Lemon pound cake.

The oven was not very hard to clean after the cake slopped over, so it’s all good. My oven self cleaning feature is broken, but I haven’t gotten it fixed because it’s the last old appliance left in the kitchen, and I’m waiting for it to die.

We had also spaghetti with baby meatballs in a homemade tomato sauce.With it a mixed green salad.To drink lemon water.For dessert 1/2 a red grapefruit.

3 years ago while cleaning our home to prep for move and sale we self-cleaned our oven and...it shattered the oven glass so we had to buy a new one. Now we're 3 years in current home and afraid to turn on "self clean" but it's a really crappy stove, 2 burners I use most operate at nuclear power only, making cooking a "don't walk away" event ha.

I told husband to research which oven to buy which he s trying to do between doctors appointments (retired--that's what we do).

Tonight is homemade Tom Kha chicken soup using store-bought spice packet. Side veg will be oven-baked squash and potato slices. Dessert: lemon pudding

Tomorrow is turkey! which is defrosting. We are in a 3 day rain event so turkey will be great. Still deciding what potato to make. Side of stir fry asparagus, green beans and carrots with ginger and garlic.

Tonight at the Case abode: H-E-B homestyle meatballs with Prego garden chunk tomato sauce, and sided with a steamed broccoli/cauliflower/carrot medley.
