DH is doing a cedar plank salmon. I may, or may not eat it. Last time it was bland and fishy. Either he cooked it different, or it is because I bought it without the skin.

The skin is the best part! also I find as it cooks, the oils drip downwards from the skin with all those healthy Omegas basting the flesh!

I ended up throwing my little cornish hen into a pot of Thai coconut soup- perfect for a cold winter day with some rain coming down!

I am making a meat loaf. I don't want to spend a lot of time in the kitchen as the football bowl games start today and meat loaf is pretty simple. We will also have a green vegetable and rice. The old time cook in me is showing: when I was growing up we always had rice when we had meatloaf. My mother in law, on the other hand always had baked potatoes which makes sense, if you are heating the oven you might as well stick the potatoes in as well.

Today is home-made deli day. Potato salad (potatoes already cooked), carrot and raisin salad, chicken salad (from leftover chicken). Couple of fresh tomatoes.

Homemade Chicken fried Rice. I might even make my own duck sauce and some veggie egg rolls.

Board game night tonight!
So pan fried potatoes with onions and caraway served with pickled herring/rollmops and a green garden salad. To drink beer or white wine and Akvavit for digestion
Later in front of the fireplace Glühwein /mulled red wine or black coffee served with spice cake/Gewürzkuchen.

I took my leftover prosciutto tomato sauce and added ground beef. I mixed that with some fusilli and threw it in the oven. Later I will sprinkle some grated parmesan and provolone over the top and throw it back in the oven. So I guess a kind of jacked up Johnny Marzetti. I have some good crusty bread to serve with it. A Magic Hat #9 to drink.
