I will be stocking up on supplies at WalMart before making my next camp today so I'll be enjoying their rotisserie chicken and broccoli salad for my dinner tonight along with some White Zin by Sutter Home.

Cod (frozen) smothered in a mango, avocado and red bell salsa, and maybe some leftover quinoa on the side....

Since I'm off to another business trip tomorrow, I'm making my husband one of his favorite dinners:

Peach-Bourbon Chicken Wings (grilled)
Collards with pork neckbones
Garlic/Parm Mashed Potatoes
Cream Cheese & Chive Biscuits

He's not getting dessert - I don't have time to make it and he missed going to the gym twice this week.

I had a tooth pulled today and Invisalign installed, so I'm thinking maybe mashed potatoes? soup? And everyone else can fend for themselves.

I made Italian sausage lasagna with Ricotta, Mozzarella, Parmesan, Asiago, and Pecorino cheeses. My wife said I'm not allowed to make a marinara better than hers.

BTW - it's not overly cheesy. I just added the variety of cheeses for their unique flavors.

Tonight I am making chicken tacos on corn tortillas. They have their choice of lettuce, salsa verde, guacamole, hot sauce, lime slices, sour cream and/or sliced jalapenos.
