pasta scramble, my rainy day favorite--

brown ground meat (tonight its turkey) and onions in pan, add PESTO (secret ingredient) alot of it, add spagetti sauce, simmer for a bit, and top off with macaroni noodles or bow tie pasta, top with shredded cheese and aged parm (if you have it)-
serve when cheese on top has melted through, its my stovetop lasagna really....

optional- add veggies- tonight its chopped kale, and season to taste....

Having neighbors in for wine and appetizers so dinner will be whatever. I am guessing I will simply grab a couple of pieces of frozen Talipia, stick it in the air fryer and make a small salad for us.

Tonight fish stew Quick Easy Fish Stew Recipe | SimplyRecipes.com and for dessert Ambrosia ,a layer of pineapple and orange slices sprinkled with shredded unsweetened coconut and fresh pressed orange juice over both fruits. We also add generously Cointreau.

I am making a big batch of red sauce and meatballs today. I will freeze most of it. I will serve some of it on pasta with some homemade garlic bread.

I suspect it will be baked beans with either burgers or crispy fish. Maybe some coleslaw or oriental salad.

Some great Oklahoma catfish with baked beans, Cole slaw and corn on the cob with corn bread for DS. For me Nutrisystem stuffed shells with spinach.

Since the mister has been feeling a little neglected lately, I thought I'd make something he enjoys (soup and sandwich).

Tonight we're having creamy crab and wild rice soup; cheeseburgers topped with Asian slaw, homemade hoisin ketchup and garlic-chili mayo; garlic-parmesan yellow squash chips and beer for him and wine for me.
