I've read articles claiming quitting cigarettes may be tougher than quitting heroin. Beung an ex-smoker myself I'm a frim believer it's mostly a mental thing, if someone really wants to quit, they will. Hang in there, it's worth it in the long run And food tastes sooooooooooo much better

Lazy kinda day in the NE, I think mayve just a pasta/tuna salad will be dinner tonight.

Tonight I think I am going to make the chicken marsala..........so easy, so good. I never know who is going to come through my doors of Sundays so there is always plenty for everyone.....If not, the leftovers are great.
This is probably the last Sunday in May that I am actually home.....we have a wedding weekend, a First Communion, a mother/daughter/sister weekend coming up even hubbies B-day. soooooo busy

Decision made-bought fried chicken (our local store's is delicious), store bought Ranch mac salad, fresh corn and a good looking tomato. All I have to do is shuck the corn and slice the tomato. I'm very lazy today.

Here it is..........................

Chicken, Bacon, Brown Sugar Marsala


4 pieces boneless chicken breast (pound till thin)
8 slices of bacon
1/2 cup brown sugar
1/4 cup marala wine
2 cloves garlic
2-3 Tablespoons olive oil
1/2 pound fresh mushrooms (sliced)
1 cup chicken broth


First coat each bacon strip with brown sugar. Place on parchment paper on cookie sheet in a 350 oven until the bacon is almost done and the sugar is carmelized. (about 10 minutes or so). Remove and set aside.
While the bacon is cooking, prepare the chicken marsala by flouring the chicken. In the hot oil, saute the garlic, add mushrooms then the chicken, then the wine.
Add the chicken broth blending it all together. When the chicken is almost done, remove from the pan and set aside.
Now wrap each piece of chicken with the bacon. Place back in the pan and slowly cook spooning the mixture over the top. You do not have to turn the chicken. Cook until done and serve with pasta. It is different and certainly worth the little extra effort.

Thank You Crazy World......(if I am not mistaken....you posted this once before....I recognize the caramelized bacon trick....I hope I try it....it sounds delicious! Thanks again.

I'd probably be snacking on that bacon and not much would make it to the chicken.
