Mighty good eating around here, as always. I've discovered that it's not wise for me to check in until after breakfast, lest I go do something unwise after reading about everyone else's delicious suppers!
We're not sure whether or not our weekly dinner guests are joining us tonight, so spouse decided on a big meatloaf and mashed 'taters, with additional veg to be determined later. Meatloaf will be plenty for four if they join us, and if not, it's easy to slice down and freeze for sandwiches later on. And the sneaky, Machiavellian part of me hopes that we'll have lots of mashed potatoes left over, so I can inveigle the spouse into scheduling a batch of mashed potato and onion soup later this week.

This is too funny! On our way to swim practice, at 5:30am mind you, my DD said she wasn't eating at all today since it was "fat" Tuesday calories were doubled. Wait until I tell her no calories count when she gets home.

Jaxson, the Sunday dinner get-togethers are on hold for a bit as my sons father, my X, is out visiting for a while right now. Although we do get along and there are no problems they are pretty busy going and doing things together right now. And in March Amber is suppose to also be here so we will all be getting together a lot hopefully at that time! After everything gets back to normal I am hoping to get this tradition started.
Haven't considered dinner yet--still on my first cup of coffee and I don't think until I have at least one more cup of coffee!
I've got to make a run to the store to buy ground chicken for my doggie's dinner.....she has a delicate stomach but tolerates boiled ground chicken ..... so that is on her menu every meal...... I gave her the last of the chicken for breakfast so a trip to the store is imperitive! We happen to be having chicken as well.

We are really low on perishable food. Hubby is getting the last 2 eggs for breakfast and we have no bread. Thankfully the snow melted on the drive and we can finally get out today. Woo hoo.
Tonight I am having a veggie burger with steamed broccoli and carrots. DH is having a cup of pasta and meat sauce(gravy).
I feel quite replete as my dinner last night was so fabulous. We had the pork loin roast, mashed potatoes, pork gravy, and fresh spinach, and finished it up with a homemade* cherry pie. We only have a tiny bit of pork roast left, enough for each of us to have a small portion for lunch. I just nuked the spinach plain for 3 minutes and a put a little bitty bit of salt on it. I always serve the green veg plain when I have other rich side dishes.
I didn't quite follow all of Kelsie's instructions on making an herb paste for the roast because I was tired. I covered my roast in olive oil, then rubbed fresh rosemary, a little dried oregano, salt and pepper on it. Then cut little slits all over to slide in thin slices of garlic cloves. MMMMMMMMMMMM. Don't skip that step, glad I didn't Kelsie.
I am not sure what to make for dinner yet...Perhaps eggs in a hole with a side of bacon, followed by a salad.
* if you consider putting a pre-made crust in a pie plate, pouring a can of pie
filling in, slapping another pre-made crust on top, sprinkling that crust with demerara sugar, and sliding the thing into the oven, to really be pie making.
Debsi-isn't that how pies are made? At least here they are!
