Hey y'all! Got back from Mississippi a couple of days ago, was there for all that time with no email or TV!
Anyway, I made blue cheeseburgers and home fries with coconut cake for dessert, having a glass of pinot noir and catching up, hope everyone is ok!

A burger with blue cheese on it is my favorite way to have it! Forget that orange/yellow cheese that so many people use

Oh my gosh but the smothererd pork was wonderful. My DD really enjoyed it. When I got to the store they had family packs of country pork ribs for $2.80 a pack. That is at least 4 meals for us. Couldn't pass that up. Seasoned it with lemon pepper, browned it, sauteed some onions, put all back with chicken stock to cover. Add bayleaf and garlic powder (didnt' have fresh garlic). Cooked it down until the pork was "fall of the bone tender". It's really wonderful.
