A quickie recipe that I saved...(havent made it but it looks good and easy).
Mexican Chicken
3 full boneless breast of chicken cut in half
12 oz. jar of your favorite salsa
1 can black beans drained
1 cup frozen corn
1 cup shredded Cheddar cheese
Pre heat oven 350
Place chicken in baking dish, cover chicken with salsa,beans and corn. Cover baking dish with foil.
Bake for 45-60 mins depending on thickness of the chicken breasts.
When about done....uncover and spread cheese over top and return to oven. When cheese is melted and slightly browned, remove and serve with sour cream on the side.
oops in my trying to remember when i was 31 i forgot to add what i was having dinner. we are having honey ham steaks and sweet potatoes and something else, not sure what yet.

Tonight for dinner we are having roasted chicken thighs served with the leftover red and green hot sauces and some flour tortillas. I suppose I shall also have to cook that broccoli that's been hanging out in the crisper drawer for way too long. Will also serve some pinto beans.

Haven't been posting here much lately, been in kind of a funk with the economy smacking me around pretty good lately and looking at a redo on my shoulder surgery that I had 6 months ago .
Maybe a pizza is just what the doctor ordered? Hmmm, white pizza w/extra garlic some spinach?
