You know, I love fish tacos but have never tried to make them.

I think we are doing pizza instead of my original plans tonight

So much for the grand ideas of pizza tonight. No pizza makings to be had in our one stop light town. So it's TexMex and glad to get it. I will help myself to tacos and burritos and then regroup with the pizza ideas for tomorrow night. Sooner or later I will get a pizza. Sooner I hope.

I thnk I will be checking in here just a little less frequently......as I struggle with food withdrawl for the start of my healthy diet plan. I will be coming in but not necessarily reading everything....it all sounds too good for now. Bon Appetit.

I hear you, Elston. Tomorrow starts our healthier plan. DH got some bad news about his triglycerides this morning. I guess that's what happens when you have 6 toast for breakfast every morning!

Well eslton maybe you can post the good/healthy/low fat things you are making and eating for all of us! Eating good never hurts anyone. Infact a few of us have actually started posting some really great sounding low fat meals. Ah, I don't want to not see your smiling face here! You are my support! But I do understand and hope for the best for you in this journey!

Ok, here's another one of mine that's not even a recipe...

1 cut up chicken (I don't recommend boneless skinless breast)
1 can of tomatoes (diced, stewed whatever you have)
1/2 head of cabbage, chopped up bite size
1 large onion, sliced
1 or 2 garlic cloves, chopped
2 bay leaves
chicken broth or stock if needed (I have them frozen in cubes, so I usually add 1-2 cubes)

Dump everything in a large pot and cook slowly for 1 hour or so add broth or water if needed. I use my pressure cooker for about 20 minutes. Season with salt and pepper. Good with mashed potatoes or just crusty bread.
