Am I hearing spiced Red cabbage and apple????

That is my all-time fave Christmas/Thanksgiving side dish...long-slow-cooked red cabbage, onions, apple, red wine vinegar, spices, sugar etc etc. I could eat that all year round!

Just love red cabbage and apples-baked with allspice, brown sugar, vinegar.

Cyn also apple/sausage stuffing goes great with pork.

Lima Bean soup tonight. Temps only 40's this week and possible snow showers Weds.

I am putting myself on a pre-holiday diet....this morning I had a healthy breakfast and will try to stick to smaller portions, less carbohydrates and lots of water. My "Whats For Dinner" entries may or maynot reflect this resolution..(DP is as trim and fit as a fiddle) ...but if the dish isnt totally healthy at least I promise my portions will be half of what I have been eating.

At this point I have so indulged myself that a little self restraint will be a good thing (but I am glad that I had that pecan roll yesterday after church.)

Crèpes stuffed with onions and ground meat from yesterday's dinner were put on hold. I decided they could wait another day and prepared rosemary potatoes and also the left-over Turkish pizza had to leave the fridge.

So tonight it's French dinner.

Not sure about tonights supper.....thinking healthy......but when I last shopped....I didnt shop particularly healthy....I need more vegetables and lean meats..use less butter in cooking everything .but will see how I do. I do have to eat up some wonderful home made New England Baked Beans that I made....with plenty of salt pork and Molasses....that will be divided into small portions...not the main course. I have every intention to stick to this......weigh in will be in a few minutes....to get a baseline weight.

Oh Elston you are too funny.
I for one am looking forward to you tweaking some recipes and making them low fat and healthy and sharing them with us as I for one am always looking for that.


I am learning that we can still make some really good "regular" meals and just substitute with low fat or fat free and a little extra spice and it tastes good.
If you start with Lacey's Chicken Cacciatore, it will be easy.

Oh and I so love pecan rolls!
Thank you all for all the great ideas on the apples and thank you elston for the answer for softening the cabbage leaves before attempting to make it into rolls. Now I need to go and buy the ingredients to prepare the cabbage rolls. Freezing the applesauce is a great idea. Last night when our neighbors stopped by with our goodies I had mentioned to them when they were here that I was looking for someone in the area with pecan or walnut trees. About 2 hours later I hear the back doorbell ring and it was them with yet another bag but this one was filled with some nuts they had gone and picked up from a friend who has a nut tree! Course the nuts still need to dry but who could ask for better neighbors? Yes, we are very lucky!

The year I lived in Alabama....I had a huge pecan tree in my front yard....I was out in the country and my house was one of the little two room shacks that sits up on concrete blocks with an out house in the back, and a little sitting porch on the front with a couple of rickety old cane bottomed straight backed ladder chairs to sit and do kitchen chores and to greet passers by. The front yard was bare hard packed dirt...that you swept with a twig broom rather than mowed....very rural living.... In the fall, after the frost....the nuts would start to fall.....each morning you could pick up a dozen or so.....they were the paper thin shells that you could take two in your hand and crack them against each other.....lovely memories.

Elston if I've been able to do it-you sure can. Like CrazyW said all foods can be adapted with low fat or no fat items. I tend to use low fat as nofat has a sweeter taste.

The trick I found is it's not a diet it's a lifestyle change. I packed on so much when we moved here just out of frustration, depression but since June have taken control of my life and I've never felt better. I don't do the scale-only at the doc's-and sofar have lost my 30lbs I packed on. I go more by my clothes and my overall feeling of wellness and contentment.

Plus I want to be the HOT MAMA of the handsome groom!!!!!

Not sure what i'm making tonight. I didn't do much all weekend and was pretty much stuck inside.

I'll probably go to the market on my lunch hour. I was thinking boneless pork chops with stuffing and apples.
