Ah, Nomad...wifey made the cake, eh?

Highlandsgal, I'm sorry to hear about BF's (and your) loss. My best wishes to you both.

Neither of us is real hungry or ambitious, so I talked DH into throwing some stuffed shells into the oven. I've been craving something like that for a while. No big deal, but it'll fill the hole.

NMS-love stuffed shells. Haven't made them since last year.

If possible the chicken tastes better today than yesterday (just had to sneak a taste-ya know as the "cook").

Lithuanian Kugelis

  • 1 pound bacon, diced
  • 2 large onions, diced
  • 1/2 cup butter
  • 5 pounds russet potatoes, peeled and shredded
  • 1 (12 fluid ounce) can evaporated milk
  • 6 eggs
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place bacon in a Dutch oven set over medium heat, cover, and cook until the bacon has softened and begun to release it's grease. Stir in the onion and cook until softened and translucent. Remove the cover, and continue cooking and stirring until the mixture caramelizes and turns a deep, golden brown. Remove from heat and stir in butter to melt.
  3. Stir shredded potatoes into the onion mixture, then stir in the evaporated milk and eggs until well combined. Pour into a 9x13-inch glass baking dish.
  4. Bake in preheated oven for 1 hour, or until golden on top. Remove and let stand for 10 minutes before slicing into 3x3-inch squares. Serve hot.
THAT'S IT! Thanks! It's good warm, but better sliced and fried the next day. My Lithuanian friends made it all the time, but his wife passed and haven't had it since.

It isn't "spag" because you can't say "sketti", is it?

Everyone's dinner sounds so good. Ours will be a quick hamburger on the grill, an antipasto salad, and some baked beans I worked on this afternoon (not TOO much work). I have to run out to a meeting at 6:45, so there isn't much time for fussing tonight.

DH did just turn on the oven for me and mentioned that there was a can of cherry pie filling and a can of tart pie cherries sitting on the counter. He asked if I could do something special with it tonight!! LOL. That is his way of saying he is hungry for some cobbler! It will just take a minute so why not!!

Have a great dinner, folks. Be readin' ya!

Chicken was good. Veggie plan got the axe in favor of a large fresh salad with an avocado, onion, tomato, lettuce, carrot, and who knows what else but it was good too. As soon as it is comfortably settled there will be the chocolate cake to be reckoned with.
