Blueberry Coffee Cake
-1 cup packed brown sugar
-2/3 cup all-purpose flour
-1 teaspoon ground cinnamon
-1/2 cup butter
-2 cups all-purpose flour
-2 teaspoons baking powder
-1/2 teaspoon salt
-1/2 cup butter
-1 cup white sugar
-1 egg
-1 teaspoon vanilla extract
-3/4 cup milk
-1 1/2 cup fresh blueberries
-1/4 cup confectioners' sugar for dusting
1. Heat oven to 350 degrees F (175 degrees C). Coat a Bundt pan well with cooking spray.
2. Make the streusel topping: Mix 1 brown cup sugar, 2/3 cup flour, and cinnamon in a medium bowl. Cut in 1/2 cup butter or margarine; topping mixture will be crumbly. Set aside.
3. For the cake: Beat 1/2 cup butter or margarine in large bowl until creamy; add 1 cup white sugar, and beat until fluffy. Beat in egg and vanilla. Whisk together 2 cups flour, baking powder, and salt; add alternately with the milk to the creamed mixture, beating well after each addition.
4. Spread half the batter in the prepared pan. Cover with berries, and add remaining batter by tablespoons. Cover with streusel topping.
5. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, until deep golden brown. Remove pan to wire rack to cool. Invert onto a plate after cake has cooled, and dust with confectioners' sugar.

Sour-Cream Coffee Cake
~ 1/2 cup finely chopped California Walnuts
~ 1 teaspoon ground cinnamon
~ sugar (1/2 cup for step 1 and 1 cup sugar for step 2)
~ 1/2 cup butter or margarine
~ 2 cups all-purpose flour
~ 1 cup sour cream
~ 2 eggs
~ 1 teaspoon double-acting baking powder
~ 1 teaspoon baking soda
~ 1 teaspoon vanilla extract
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1. In a large bowl, combine nuts, cinnamon and 1/2 cup sugar; set aside. Preheat oven to 350 degrees. Grease 9-inch tube pan (you know, the ones with the hole in the middle)
2. In large bowl with mixer at medium speed, beat 1 cup sugar with butter until light and fluffy. Add remaining ingredients; beat at low speed until blended, constantly scraping bowl. At medium speed, beat 3 minutes, occasionally scraping bowl.
3. Spread half of batter in pan; sprinkle with half of nut mixture; repeat layers. Bake 60 to 65 minutes until cake pulls away from side of pan. Cool in pan on wire rack 10 minutes; loosen inside edge; invert from pan onto rack to cool; serve warm or cold.
**This is delicious! I've always gotten compliments on it...and my MIL especially likes it and she's the queen of making homemade stuff!

i can vouch for the Sour Cream Coffee Cake; I make it in a bundt pan...and call it Jewish Coffee cake....it is delicious.
