Get your dog to lie down first. It's even easier if he lies on his side, but if not, that's okay, too.
With one of his favorite treats, show it to him and then move it BACK toward his tail and to one side. If he follows it the way dogs usually do, he'll go onto his back, when you'll move the treat back up to his head which should be facing the other way from where it started. Once he does this once it gets easier. Say "roll over!" while he's doing it (say it JUST ONCE!) each time. Then drop the lure, but still use your hand for him to follow, once he has the hang of it and reward when he completes the roll.
We tried for over 11 years with Miss Millie (our Boxer) but would she do it ? no of course she wouldn't. Would do everything else but when it came to rolling over was just stubborn - but funny.

No she didn't she would roll on her back for us to rub her - but when she wanted.
