What you read in Guyton's came about through rigorous application of the scientific method and reviewed by the great physiologists in the world.

A new edition comes out every few years that is revised based on new evidence and studies that have passed critical muster.

I am afraid you are exposed!

But no need for acrimony here. Just download a copy (an older 2006 edition) and start reading.

It is rare to find a common food that is 100% fat.

Most are combinations of carbs, fat, and protein.

Beef, for instance, is half fat and 3 % carbs.
