I have a folder on my desktop with some plans for a birthday party for my wife and I dont want her to see it.
it's smack right there on the desktop.
How can I hide it?

Move it to your My Documents folder. If you want, you can right click on the folder and encrypt it.

The easiest way is to simply move it somewhere else.

If she's not likely to go digging into Windows Explorer then you can just create a folder somewhere where she's not likely to look, and stash it there. Even something as simple as moving it into the Music, or Movies folder if she doesn't frequent one of them.

Also be aware of recent file history (in different places on different OS's), and browser history if any of this is web based.

In folder properties, change the folder attribute to "hidden" then make sure on the Control Panel > Folder Options > View > "Don't Show Hidden files, folder and drives" option is selected > OK.

Spoiler
...Or you could just hide the folder.

On the folder you want just make it hidden on the Desktop.

When you want to access it just go into another folder, click organize, then folder and search options, then the view tab, then pick show hidden folders. It will show right up.

Just make sure to not show hidden folders after you're done.

Turco beat me to it...

Another way is to just send emails to yourself instead of putting things on the desktop.

Learn how to clear this. Ccleaner will do it.
