Well, since we are going to Chicago and not sure when I'll be back (last time I was there was about 5 years ago?), I'll be sure we go to Lou's.

It's actually on State Street. 1120 North. That's right where Rush and State meet and the diagonal kinda makes it look like a continuation of Rush.

Given the disruptive forces in the retail space market I would strongly encourage anyone interested in understanding the "roots" of Chicago Deep Dish to vist Uno or Due's NOW -- either / both of them could vanish when some "experience based" place like Eatly decides to move in...

I tend to agree with Drover that Lou Malnati's recipe and ingredients are very good for folks that enjoy that style of pizza but with places like Burt's and Pequods and My Pi and Girodano and other excellent spots each with variations on the dough and with different mix of sauce / spices it is not fair to say that one reigns supreme...

Giordano's does stuffed, not the Lou's or Gino's or Uno/Due-style deep-dish. And their stuffed pizza is an abomination.

If your heart is set on Lou's doss1, there's nothing wrong with that. Their deep-dish is top-tier, especially among the well-known chains.

Lou Malnati's serves excellent product.

Giordano's is an extremely successful business (run by people that aparrently know how to use the bankruptcy laws to get around tax laws Giordano's strange bankruptcy - Chicago Tribune ...) and arguably has the most consistent / wide spread seller of the stuffed style that is also popular at Edwardo's, Connie's and Nancy's locations....

OK guys, taking this trip tomorrow! We should arrive to Midway around late afternoon. We will take the Orange Line to State/Lake and then transfer to Red Line for a stop at Grand, in which we will either walk 9mins to the Hyatt or cab it depending on how cold it is.

Does this sound like a logical plan?

Sounds logical. Just remember that the Orange line is elevated, while the Red Line is underground, so you'll have to go down the stairs, then go down another flight into the subway station, then down another flight onto the train platform. If it's cold out, I'd just skip the red line and take the cab - it won't cost you that much more and it'll save you some energy, unless you want the extra small workout
