We would like to come down this weekend to see the Discovery Museum and maybe catch a few good meals (we are in Raleigh). Where would be a good place to stay 1 night that is safe but won't break the bank? Preferably somewhere close to restaurants.

Hampton Inn at Phillips Place is extremely nice (not a typical Hampton Inn).
Some restaurants there, shopping movies to do after your time at Discovery Place.

If you Priceline you can get a good hotel uptown for less than $100. I'd start 3 stars and $75. You'll likely get the Crown Plaza...If you go 2.5 stars you'll get the Blake which is not so nice

Just stayed at the Hilton Uptown for 80 a night, used priceline.
