    To prevent contamination, food employees shall effectively restrain or cover hair to keep their hair from contacting exposed food, clean equipment, utensils or linens or unwrapped single-service or single-use articles.
  • A food packaged in the facility did not contain a label. Observed pre-pakaged, self serve items without a label of information.
    Foods shall be labeled as specified in this rule.
  • Observed re-use of single-service or single-use articles. Observed sauces being stored in opened cans.
    Single-service and single-use articles may not be reused. Properly store all food products in food grade containers to prevent possible cross contamination

  • Critical: TCS foods were not being held at the proper temperature. Creamer in the reach-in cooler was holding at 47F.
    Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less. Items re-arranged and creamers placed on top shelf to allow for proper air flow. Discontinue overstocking cooler to allow for proper air flow. Correct By: 04-Jun-2014
  • Critical: Utensils and food-contact surfaces of equipment were not sanitized at the required frequency. During inspection, there were towels around the grease trap. Per conversation with PIC, the grease trap is leaking from the top. I had ran the water in the 3-compartment sink and I did observe minimal water leakage.
    Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. Neptune plumbing was contacted during inspection and the facility received a call that an employee of the plumbing company is on their way. The CCBH will conduct a re-inspection within 24 hours to ensure grease trap is repaired to prevent water leakage. Correct By: 04-Jun-2014 Correct By: 04-Jun-2014
  • Critical: Handwashing sink is being used for purposes other than handwashing. Employee had discussed that produce is washed in the front food prep area handwashing sink and not in the indirectly plumbed food prep sink.

  • Critical: Observed improper storage of poisonous or toxic materials. Observed chemical spray bottles dangling above 3-compartment sink.
