  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor. Boxes of food stored on the floor in the walk in cooler. ;Elevate food storage onto approved shelving with minimum 6" legs or casters. Provide dunnage racks or other means of storing boxes off of the floor.
  • Food Preparation (corrected on site)
    Observation: Food is subject to environmental sources of contamination during preparation. Pizza and pizza dough stored on the window between the prep line and customer seating area without protection from contamination.
    Correction: Protect unpackaged food from environmental sources of contamination during preparation.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the following utensils were not observed sanitized: knives. Employee was observed washing knives in a prep sink, and sanitizing using a wiping cloth bucket.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Knives must be run through either the dishmachine or the 3 bay sink to be wash/rinse/sanitized.
  • Plumbing System Maintained in Good Repair
    Observation: Hand sink at rear prep area in poor repair. The hand sink is pulling away from the wall.
    Correction: Repair and maintain all plumbing components and fixtures. Correct in 15 days.
  • Handwashing Signage/Handwashing Facilities
    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees. There is no handwash sign in the men's restroom.
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. Correct in 15 days.
  • Toxics - Separation of Toxics (corrected on site)
    Observation: Containers of chemicals are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Chemicals stored next to the ice machine and ice scoop in a way that may cause contamination.
    Correction: Containers of chemicals must be separated by spacing or partitioning to prevent contamination of food, equipment, utensils, linens or single service items.

Lighting in front prep area is now 63 foot candles. All items from previous inspection have been corrected. Approved for permit at this time.
Prior to opening, wash/rinse/sanitize all dishes and small wares.

Provide 50 foot candles at front prep area.
Provide covered waste basket in each stall of the women's restroom.
Observations:
19 foot candles in front prep area.
92 foot candles in dish wash area.
82 foot candles in rear prep area.
132 F at 3 bay sink.
130 F at rear handsink.
108 F at handsink in men's restroom.
Food may be received for training purposes at this time. Food may not be sold or served to the public.
Facility must be 100% complete before permit will be issued.
