    Observation: The nonfood contact surface of the deep fryers has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Sewage - Other Liquid Wastes and Rainwater
    Observation: A condensate drain line servicing the walk-in refrigerator was emptying liquid waste directly onto the floor of the walk-in refrigerator.
    Correction: Repair/Relocate the condensate drain line to prevent liquid waste discharge onto the floor surface.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor wall juncture in areas through out the kitchen, is not coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor wall juncture to no larger than a 1/32 inch space.

    Observation: Less than 10 foot candles of light was noted in the rear of the walk-in refrigerator.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Ventilation is not sufficient to keep rooms free of excessive obnoxious odors

Discard old paint/primer cans. Missing coving tile is scheduled to be replaced. Facility is open and serves on weekends. Very clean, organized and maintained facility. Send the health department a copy of the last bacteriological test results of the drinking well. Health Permit Renewal will be issued upon receipt of application and fees.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Bathroom ceiling vent covers and the floors under fryers and in the walk in units noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Several faucets are corroded preventing easy cleaning.
    Correction: Repair the EQUIPMENT to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the EQUIPMENT, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: Surfaces of the can opener, in contact with non-potentially hazardous food items, were observed soiled with accumulations of grime and debris.
    Correction: Clean the surface of EQUIPMENT at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
