Person in Charge (PIC) has contacted Hobart professional who will be visiting facility within 24 hours to service the high temperature ware washing machine. Find Health permit, and post the permit and the Certified Food Manager's certification in the plain view of the public.
  • Jewelry - Prohibition
    Observation: Employee wearing jewelry (bracelet) on their arms and hands while preparing food.
    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.
  • Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature (corrected on site)
    Observation: The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature was 150 F while the actual temperature was 132 - 148 F. Person in Charge contacted a Hobart professional and the professional will be visiting the facility within 24 hours to service the high temperature sanitizing ware wash machine.
    Correction: Discontinue the use of the ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean equipment and utensils. To minimize workload you can move to all single service utensils.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Ceiling tiles over the coffee prep area noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Permits
    Observation: Permit is not posted in a place where it is readily observable by the public.
    Correction: Post the permit in a place where it is readily observable by the public transacting business with the establishment.

Discussed the following with the Person In Charge (PIC): 1) Post permit and Certified Food Manager (CFM) certificate in plain view of the public 2) Monitor milk temperatures by the use of food thermometers.
Health permit issued.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Milk (51 F) in the 2 door lowboy unit cold holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Ceiling tiles in the front of the store, and the floor in the back of the store noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Mops - Drying Mops (corrected on site)
    Observation: Mop not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

  • Equipment - Good Repair and Proper Adjustment
    Observation: The inside bottom of the drawer to the left of the front handwashing sink was observed in a condition that prevents easy cleaning.
    Correction: Repair the drawer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the drawer, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the back hand sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor tiles observed damaged and not smooth or easily cleanable in drink prep area..
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.
