  • Food Storage - Clean and Dry Location (repeated violation)
    Observation: Potatoes, all purpose flour and cane sugar stored direcly on the tiled floor in the dry food storage room in the kitchen.
    Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: She crab soup hot holding at improper temperatures of 125°F on the steam table in the kitchen. Unit not turned on at the time of inspection. Food removed from unit.
    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.
