    Observation: Food in contact with equipment or utensils that have not been cleaned or sanitized as required. Raw meat cut on the cutting baord not saintized before preparing lettuce.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation. Stopped the operator before preperation of the lettuce had them prepare a sanitizing bucket and wipe down the cutting board before and prepare the lettuce on another surface until the board air dried.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands. Operator provided soap during the inspection.

    Correction: Calibrate food thermometer according to manufacturer's specification as necessary to ensure accuracy. Calibrated the thremometer for the operator during the inspection. Explained how th check and verify calibration of the thermometer during the inspection.

    Observation: Plumbing connections under the three compartment sink sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair. Operator is aware of the problem and is working to correct it.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Operator discarded products during the inspection and adjusted the temperature. Operator to track the temperature of the unit and agreed not to use until food temperatures are maintained at 41 degrees or less.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. When tested ther was no sanitizer in the three compartment sink. Operator did ot have any saintizer in the facility.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F. Operator called to have some bleached dilivered during the inspection.

If the food is held at 41°F or below the food shall be served or sold within 7 calendar days.     Observation: Chest freezer in the back was observed in a state of disrepair and damaged. Lid not tight fitting with gaps.
    Correction: Repair the freezerto restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the chest freezer , replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials. operator provided towels at these locations during the inspection. Replace towels when they run out.

    Observation: Observed methods are not being used to control pests. Files present in the facility.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required. Discussed methods for removal with the operato.

    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Raw hamburger stored over RTE foods in the preparation unit and the Walkin cooler.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Food in the WIC cold holding at improper temperatures food temperatures 43-45.
    Correction: Cold foods are required to be held 41 degrees or less. Operator turned down the unit during the inspection unti operating at 41 degrees by the end of the inpspection.
