Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Discussed glove use with management. Discussed cleaning frequencies for the walls in the preparation area and the food prep sink.
Critical: Hands - Preventing Contamination from Hands* (corrected on site) Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. Employees observed cutting and handling tomato, onions, and peppers for pasta salad with bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands. Discussed with staff and complied using utensils and gloves during the inspection.

Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site) Observation: Due to improper operation of the low temperature chemical sanitizing mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1700)
Correction: Repair the unit to restore chemical sanitization. Verify the level of sanitizer and continually monitor by the use of test strips/kit. Operator switched over to the three compartment sink during the inspection and called a repair man during the inspection. Operator showed records during the inspection that it was sanitizing correctly earlier today.

Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) Observation: The food-contact surfaces of the following equipment were not observed sanitized: all food contact surfaces ran thru the dishmachine.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Dishmachine company called during the inspection operator agreed to discontiune use until repaired if needed the three compartment sink will be used.
