Handwashing - Using a Handwashing Lavatory - No Other Purpose Observation: Observed hand washing sink by 3 compartment sink with pans stored in sink.
Correction: Do not use hand washing sink for any other purpose than for hand washing. Keep accessible at all times.
Physical Facilities - Cleaning Frequency and Restrictions Observation: Front edge of hood observed to have grease build up as well as side of fryer.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

NOTE: Great job on date marking on sliced deli meats. Discussed allowing foods to cool uncovered to allow heat to escape. An employee health policy was left at the firm.
Handwashing - Using a Handwashing Lavatory (corrected on site) Observation: The hand wash sink beside the 3-compartment sink was blocked by a table and the basin was holding a dish drying rack.
Correction: Keep hand sinks accessible at all times.
