Observation: The prepared ready-to-eat (RTE) pasta salad in the refrigeration unit is not properly dated for disposition.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: The door gasket to the 3 door cooler is loose.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications. Correct in 30 days.

Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. Observed employee handling plastic spoons by the lip contact surface when placing them into dispensing container.
Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination. Use gloves when handling single service utensils to prevent bare hand contact.
- Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
Observation: The handwash station at the dry storage area is being used for purposes other than washing hands. A teacher was using the hand sink to make play dough in.
Correction: The handwash facility identified above is to be used for washing hands only

- Refuse Outside Receptacles (repeated violation)
Observation: The cover of the refuse container located outside the establishment is not a tight fit. The lids are pinned between the dumpster and the loading dock preventing them from being used.
Correction: Replace the door of the outside refuse container with one that is a tight fit. The lids must be closed on top of the dumpster and the dumpster must remain on the concrete pad. Correct in 15 days.

Observation: The nonfood contact surface of the walk in freezer seal is not designed or constructed to be easily cleanable. The element of the door heater is exposed and is not functional.
Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Repair or replace the molding that covers the heating element.

Observation: Observed a hose attached to the mop sink faucet fixture. The hose extended below the flood rim level of the sink basin.
Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch. Correct in 30 days.
