Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* Observation: Cases of thawing chicken and raw beef observed stored next to corn and pre-cooked beef in the walk-in cooler.
Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Create additional storage area to prevent cross contamination or create an effective barrier between raw animal foods and ready to eat foods.
Refuse - Maintaining Refuse Areas and Enclosures Observation: Food spills observed in the trash staging area under the rear deck and leading to the municipal solid waste storage area.
Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary. Recommend tight fitting containers to prevent spillage/leakage.

Recommend that the person in charge complete an approved food safety class. Please fax a copy of the invoice for new cutting boards to the Montgomery Health Department within 10 days of this inspection or otherwise demonstrate that the existing cutting boards have been resurfaced.
Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site) Observation: Beef, beans, rice hot holding at improper temperatures.
Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.
Equipment - Cutting Surfaces Observation: The cutting board(s) along the food preparation area and throughout the facility are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Temperature Measuring Devices Observation: There was no temperature measuring device located in the drawer cooler and drink cooler.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
