Equipment - Cutting Surfaces Observation: The cutting board(s) along the preparation area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (corrected on site) Observation: The nonfood contact surface of the grill table is not corrosion resistant, nonabsorbent, and/or smooth. News papers used on table to catch grease from grill. Utensils stored on top of news paper.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Remove news paper.

Routine
Make sure all food employees are aware of employee health policy. Check cook temperatures regularly. Sliced tomato and soup observed cooling properly.
Critical: Food Contact with Equipment and Utensils* (corrected on site) Observation: Food in contact with equipment or utensils that have not been cleaned or sanitized as required. Tongs used for raw beef were observed being in contact with the trash can and were placed back into the container of raw beef.
Correction: Use only cleaned and sanitized utensils or equipment during food preparation.
Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site) Observation: The injected marinated beef was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria.
Correction: Continue to cook the meat to heat all parts to 155°F or above for 15 seconds.
Floors, Walls, and Ceilings - Cleanability Observation: Floor or floor covering in dishwasher room is not smooth and easily cleanable. Floors are lined with a layer of cardboard.
Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable. Rubber mats may be used to prevent slip hazard. Correct immediately.
