Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings (such as around air conditioners), 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Before opening for the summer, clean all surfaces where apparent droppings are observed, and sanitize the sink. Inspect these areas at start of business whenever opening for the day, and clean/sanitize as needed. Dispose of trapped pests promptly and in approved manner.

Observation: Less than 50 foot candles of light was noted in the cooking area (deep fryer and flat-top grill).
Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.

Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms.

Observation: The floor beneath deep fryers and flat-top grill was noted in need of cleaning (establishment has been closed since last summer).
Correction: Clean under all equipment and fixtures in kitchen, back all the way to the walls, before opening for the season and maintain in clean condition throughout the season.

Meets substantial compliance. No food except canned sodas was present in the establishment at the time of the inspection. Permit re-issued for 2014 season. Note: please label the 3-vat sink as "wash", "rinse", and "sanitize", and install a shielding panel between the drainboard of the 3-vat sink on which dirty dishes are placed, and the handwashing sink adjacent to it.

Correction: Provide a self-closer for the toilet room doors. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Gaps (daylight visible) exist below one of the air conditioners, and along the (non-functional) door on the side of the building.

Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
