    Observation: The nonfood contact surface of the shelves in the walk-in cooler is not corrosion resistant, nonabsorbent, and/or smooth. It is rusting and corroded.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Please refinish these shelves (sand and paint) or replace them.

    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read approximately 125ºF maximum during several "runs" of the machine.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils, or switch to disposable serving ware. XXX XXX The school's maintenance department was notified

    Observation: The nonfood contact surface of the shelving in the walkl-in cooler is not corrosion resistant, nonabsorbent, and/or smooth. It is rusting and corroded.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Please repair (such as, paint) or replace the shelves.
  • Sewage - Other Liquid Wastes and Rainwater
    Observation: A condensate or meltwater drain line from the ice maker was emptying liquid waste directly onto the floor under the ice maker. This pipe also was noted in need of cleaning (apparent accumulation of black mold on outside of the pipe).
    Correction: Repair/Relocate the condensate drain line to prevent liquid waste discharge onto the floor surface. Clean the exterior of the drain pipe.

    Observation: The nonfood contact surface of the shelving in the walk-in cooler, and in the 2-door wheeled reach-in cooler near the serving line, is not corrosion resistant, nonabsorbent, and/or smooth. In the walk-in, the shelving, while clean, is rusty. In the reach-in, the paint or glaze has chipped off the shelving and the shelving is rusting where the paint has come off. These surfaces therefore are no longer smooth and easily cleanable.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning, must be smooth, durable, and nonabsorbent. Please refinish or replace these shelves.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The two ceiling-mounted HVAC units at the back of the kitchen were noted in need of cleaning: there are thick accumulations of lint or dust on their grilles.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A schedule of regular cleaning by kitchen and/or maintenance staff should be established and followed, to maintain the facility in a clean and sanitary manner.

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Clean and re-finish the surfaces of the shelving, or replace it with equipment of appropriate material.

    Observation: The wooden (maple?) cutting board on the 2-vat prep sink is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface (sand or plane) this board, or discard it and replace it to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Toilet Rooms - Closing Toilet Room Doors (corrected on site)
    Observation: Toilet room door (in kitchen) is being kept open.
    Correction: Keep toilet room doors closed (except when cleaning or during maintenance operations) to prevent insect and rodent entrance and the associated potential for the spread of disease. Consider a reversible sign for the door "occupied"/"unoccupied

    Observation: The red and white cooler in the dining room, containing ice for drinks (self-service), is not designed and constructed to be durable: the plastic casing is splitting on the top rim, exposing the insulation.
    Correction: Remove this item from the facility and replace with an approved unit as needed. Equipment and utensils must be capable of maintaining their original characteristics in order to be easily cleaned and to prevent contamination of food.

    Observation: Ceiling beside ventilation unit in back corner (near ice machine) is not maintained in good repair: gap in panel is open to ceiling above the dropped grid.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Container of a hazardous product (oven cleaner) is not properly stored to prevent the contamination of food, equipment, utensils, linens (such as clean hot pads) or single service items (such as food-service gloves and plastic aprons) in the dry-storage room.
