    Observation: Observed employee rinsing out dishes in the 3 compartment sink fail to wash hands/change gloves before returning to the cook line.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed beans on the line and in the catering area below 135 degree.
    Correction: Reheat to 165 degrees for hot holding.
  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: Observed a small leak at the mop sink when turned on.
    Correction: Have leak repaired.

    Observation: Observed the grout throughout the kitchen was wearing away and needs to be redone.
    Correction: Have floor regrouted. Set to be done after the new year.
