*A person in charge that has the appropriate food safety knowledge should be on site during hours of operation.
*Facility needs to obtain a digital thermometer that will allow for measuring the temperatures of thin food items. A bimetallic stemmed thermometer will not give accurate temperature readings for thin foods.
*The grease trap had a very strong unpleasant odor coming from it. Facility may need to consider more frequent emptying.
*Do not leave open containers of food stored in the refrigeration units.
*The ceiling tiles in the kitchen are not smooth and easily cleanable. These should be replaced with vinyl coated tiles.
*The flooring around the grease trap has a gap that allows for food and debris build up.
*Dirt, dust, grease, debris build up was noted in several areas and was especially built up in the cooking area. Equipment that is cleaned and sanitized should not be stored near the fryer. Suggest a detailed cleaning for the facility and creating a master cleaning schedule to help maintain the facility.

    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

    Observation: Unlabeled food containers.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Improper methods used to thaw deli meat. Observed deli meat thawing on the counter.
    Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: ice machine(observed mold growth starting in the machine) and food contact equipment stored under the grill table in the kitchen.
    Correction: Clean and sanitize these surfaces for food contact and store appropriately.

    Observation: The nonfood contact surface of the walls, floors, sides of the fryer, prep tables have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The handwash station in the cook area is being used as a dump station. Observed a dirty bowl in the hand sink.

    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Observation: An air gap between the water supply outlet and the flood rim level from the sprayer at the dishwashing sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Hoods, under shelving, under and behind equipment, walk in freezer, ice machine etc., noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
